A vegan buddha bowl is one of the best buddha bowls when it comes to clean eating. This buddha bowl is full of a variety of vegetables and fully packed with high-quality nutrition.
The base of this bowl is filled with super light and fluffy quinoa; it is topped with roasted pumpkin and chickpeas that give the whole eating a crunchy flavor.
The chickpea hummus gives it a saucy texture, and fresh green veggies make the bowl colorful.
All the food ingredients have a surplus amount of vitamins, minerals, and complete nutrition, including fats, carbohydrates, and proteins.
Ingredients:
- 1 15oz(400g) can of chickpeas
- 2 cups pumpkin cubes, raw
- 1 teaspoon garlic powder
- ¼ teaspoon cayenne pepper
- ¼ teaspoon black pepper
- ¼ teaspoon salt or to taste
- 1 tablespoon extra virgin olive oil
- 2 cooking spray
- 2 cups mushrooms, sliced
- 4 cups lettuce mixed greens
- 4 tablespoons chickpea hummus
- 2 cups cooked quinoa
- 7-8 red small radish, sliced
- 1 tablespoon sesame seeds
- Lemon wedges for serving
Directions:
- Preheat the oven at 400 F; Take a large baking dish and spray with cooking oil. Spread the pumpkin cubes on one side of the baking dish and spread chickpeas to the other half.
- Season both of them with garlic powder, salt, pepper, and cayenne pepper; roast in the oven for 25-30 minutes for pumpkin cubes and chickpeas until crispy.
- Remove from oven and let them cool for a while before serving. Heat olive oil in a saucepan and add sliced mushrooms; stir and cook until mushrooms become tender; season with salt and pepper and set aside.
- Assemble the vegan buddha bowl; put cooked quinoa at the base of each serving bowl; top with roasted pumpkin and chickpeas; put chickpea hummus, cooked mushrooms, lettuce greens, and sliced radish. Sprinkle sesame seeds and serve with lemon wedges.
