● 18oz pumpkin, cubed
● ½ teaspoon salt or to taste
● ¼ teaspoon black pepper
● ¼ teaspoon garlic powder
● 1 tablespoon maple syrup
● ½ cup quinoa, dry
● 1 cup chickpeas, cooked

● 1 medium red onion chopped
● 1 cup kale, torn into bite-size pieces
● 1/4 medium avocado, mashed
● 1 tablespoon balsamic vinegar
● 1 clove of garlic, minced
● 1/2 teaspoon sesame seeds

Directions for this Kale with Quinoa Salad Recipe:

  1. Preheat the oven to 392 F and line a baking tray with parchment paper.
  2. In a large bowl, toss the pumpkin cubes with salt, black pepper, garlic powder, and maple syrup until well coated.
  3. Spread in the baking tray and bake for 15-20 minutes or until tender. Remove from the oven and let it cool for some time.
  4. Meanwhile, when the pumpkin is baking, cook quinoa according to packet instructions and allow it to cool for some time.
  5. Add cooked and cooled quinoa, pumpkin, chickpeas, chopped red onion, mashed avocado, balsamic vinegar, minced garlic, and kale in a large bowl. Toss gently to combine everything, and mix the mashed avocado.
  6. Transfer to two serving bowls and top with sesame seeds.
