Vegan Goddess Buddha Bowl

This recipe is an excellent combination as a satiating lunch or dinner because it has many nutritious and healthy ingredients. The marvelous colors ensure that the recipe is irresistible.

Ingredients:
  • 1 cup Quinoa
  • 1 1/2 tbsps Tahini
  • 1 1/2 tbsps Lime Juice
  • 1 tbsp Extra Virgin Olive Oil
  • 1/2 tsp Maple Syrup
  • 3 tbsps Water
  • 1/8 tsp Sea Salt
  • 1 cup Baby Spinach
  • 1 Carrot (large, shredded)
  • 1/2 Avocado (thinly sliced)
  • 1/3 cup Radishes (thinly sliced )
  • 1/3 cup Chickpeas (drained and washed)
  • 1/3 cup Edamame (fresh or frozen)
  • 1/8 Cucumber (about 2 inch, thinly sliced)
  • 1 tsp Sesame Seeds (black or white)
Directions:
  1. Cook quinoa according to package instructions. When done, fluff the quinoa with a fork and set aside.
  2. In case you use frozen edamame, add them to a bowl and let them thaw for 15 minutes.
  3. Add extra virgin olive oil, lime juice, tahini, maple syrup, water, and sea salt to a blender (or food processor) and blend until smooth.
  4. Wash and dry the baby spinach, then divide between bowls. Top with quinoa, shredded carrot, avocado slices, radishes, chickpeas, and cucumber slices. Drizzle with tahini dressing and sprinkle sesame seeds on top. Enjoy your Vegan Goddess Buddha Bowl!
