The roasted chickpeas in this Recipe for the buddha bowl give a crunchy flavor with healthy spices like turmeric.

The addition of fresh vegetables and fruits to this bowl makes it a complete healthy meal with a balanced amount of carbohydrates, proteins, and fats.

It cleanses your body while keeping you full and fresh at the same time.

Ingredients:

For Chickpeas:

● 1 cup(200g) organic chickpeas
● 3/4 tablespoon turmeric
● 1/4 tablespoon olive oil
● 1/4 teaspoon Himalayan pink sea salt

For Rest of Bowl:

● 1 medium-sized avocado, peeled and sliced
● 1 medium-sized persimmon, sliced
● 1/2 cup salad greens( tatsoi & radicchio)
● 1/4 cup pomegranate grains
● 1 medium-sized blood orange, cut into wedges
● 1/4 cup raw pecan halves
● Salt & pepper to taste

Directions Recipe for Buddha Bowl:

  1. Preheat the oven to 350 degrees.
  2. Take a baking tray and spread olive oil, chickpeas, turmeric, and salt over it. Mix all ingredients thoroughly.
  3. Bake for about 45-50 minutes or until golden brown.
  4. Divide the chickpeas between two bowls. Add sliced avocado, sliced persimmon, blood orange wedges, pomegranate grains, salad greens, and pecans to both bowls.
  5. Sprinkle salt and pepper to taste.
  6. Your bowl is ready.
