This Popsicle Recipe is not only healthy but it gives you a burst with flavors of mint, matcha green tea, chia seeds, and creamy cashew coconut base.

They are vegan and equal parts healthy and decadent; plus, they refresh the body on hot summer days.

Mint is very easy to add to any recipe and helps improve irritable bowel syndrome and indigestion.

Matcha is rich in natural antioxidants called catechins. It helps protect against cancer and boost brain function.

Chia seeds have a high vitamin D and fiber content that help maintain high blood pressure and prevent developing heart disease.

These popsicles are healthy and tasty; once you stock them in your freezer, your family will love them.

Ingredients:                   

● 1/3 cup (50g) raw, unsalted cashews
● 1/3 cup (87 ml) water
● 5 tablespoons organic granulated cane sugar
● 1 cup (25 g) packed fresh mint leaves
● 1/2 can (200 ml) full-fat coconut milk
● 1 tablespoon chia seeds
● 1/2 tablespoon good-quality matcha powder
● Half a pinch of fine sea salt
● 1/8 teaspoon peppermint extract (optional)

Directions for Healthy Popsicle Recipe:

  1. Presoak the cashew nuts in boiling water for 1 hour if you need to make this recipe quickly. Otherwise, soak in normal water for 3-4 hours.
  2. Soak the chia seeds in 100ml of warm coconut milk for 1 hour or regular coconut milk for 3-4 hours or overnight.
  3. In a saucepan, add water and sugar; bring them to boil over medium heat, and then add mint leaves. Cook until mint leaves become wilted; remove from heat and strain the mixture. Squeez all extracts from mint leaves and discard the remaining leaves.
  4. Drain the soaked cashews and add to a high-speed blender with mint-sugar syrup; blend until smooth. Add the remaining 100 ml coconut milk, matcha powder, sea salt, and peppermint extract if using; blend again until silky smooth.
  5. Transfer the blended mixture to a bowl; add soaked chia seeds and stir until everything becomes homogenous; that may take 2-3 minutes.
  6. Pour the mixture into popsicle molds and freeze until semi-frozen, depending on your freezer’s time. Then insert popsicle sticks and freeze for 2 hours or several days.
  7. Before serving, let the popsicles soften slightly at room temperature for 5-10 minutes. Then carefully remove from popsicle molds and serve immediately.
