The Purple Buddha bowl is like a detox buddha bowl that includes all good and healthy veggies with a yummy dressing made with natural ingredients.

You will feel so light and refreshing after eating this salad, as it will fill up your tummy with all vegan and healthy ingredients.

We have used all veggies in purple color to make it beautiful and soothing to your eyes. However, you can use different colors if you don’t find them.

Nowadays, purple vegetables are considered the new superfoods because your body does not work hard when eating them. Still, they provide excellent nutrition and protection to your body.

Purple potatoes are different from white potatoes as they are deep in color containing pigments called anthocyanins; anthocyanins help protect the body from many chronic diseases.

Polyphenols promote health and heart disease, mental decline, and a few types of cancer; purple carrots provide nine times more polyphenols than any other carrots.

The purple cauliflower is higher in antioxidants due to the pigments anthocyanins than the regular cauliflower.

Ingredients:

● 2 purple carrots, cut into spirals
● 2 cups purple cauliflower florets
● 1 medium beet, peeled and cut into sticks
● 1 medium purple potato, sliced
● ½ cup shredded red cabbage
● ½ cup kalamata olives
● 2 cups radicchio, roughly chopped

Dressing
● 2 teaspoons lime juice
● 2 teaspoons orange juice
● 1 teaspoon grain mustard
● 1 teaspoon honey
● 1 tablespoon olive oil
● A fat pinch of sea salt flakes

Directions for this Purple Buddha Bowl:

  1. Set a steamer over the stove and add the cauliflower florets and beet sticks; steam for 3-4 minutes or until tender to your liking.
  2. In another small pot, add enough water to dip the potato slices; boil over medium heat until tender and then drain and set aside.
  3. Mix all dressing ingredients in a small bowl with the help of a whisk and set aside.
  4. Take two serving plates and divide all veggies equally between them.
  5. Pour over the prepared dressing; slightly toss the plate and serve immediately.
