Vegan Beet Burger for a wholesome and hearty meal!

Vegan beet burger is the king of vegan burgers. It is hearty and delicious; it is made of fresh beets, beans, oats, and spices.

It is served as a burger with fresh tomato and onion slices and grilled on the barbecue with mayo sauce make it juicy and mouthwatering.

If you pair it with a whole-grain bun, it would be super healthy.

Ingredients:

● ½ medium onion, chopped
● 2 cloves garlic, minced
● 2 medium beetroot
● 1 cup quick oats
● 2(9oz) cans of white beans
● 2 tablespoons Worchestershire sauce
● 2 tablespoons thyme
● 2 teaspoons salt
● ½ teaspoon black pepper
● 2-5 tablespoons corn starch
● 4 whole-wheat burger buns
● 2 cups lettuce and corn salad mix
● 1 medium tomato, sliced
● 1 medium onion, sliced
● 2 tablespoons bbq sauce
● 2 tablespoons vegan mayo

Instructions:

  1. Wash and clean the beetroot thoroughly; peel and grate them using a grater or grater attachment in a food processor.
  2. Heat a pan over medium heat and spray with cooking spray; saute onion and garlic for 1 minute and remove heat. Add half of the grated beetroot, white beans, and sauteed onion-garlic mixture in a food processor and pulse until well combined and turned into a paste.
  3. Add in the remaining grated beetroot, all spices, and oats; mix well and refrigerate the mixture for 30 minutes or until oats absorb all liquid in the mix. The blend should not be so soft to handle; if so, add corn starch, 1 tablespoon at a time.
  4. Make 8 patties with cooled mixture; heat a non-stick pan over medium heat; grease with cooking oil and fry beet burger patties 4-5 minutes each side or until lightly golden.
  5. Mix the bbq sauce and vegan mayo; spread lettuce at the base of burger half, place 1 patty top with sliced tomato, sliced onion, bbq mayo, another burger patty, lettuce, and another burger half.
