Stuffed Vegan Bell Peppers

Stuffed vegan bell peppers are as much delicious as they look. They are very simple to make yet so yummy in flavor.

These are vegan stuffed bell peppers filled with quinoa, tofu, and vegetables. Quinoa is gluten-free and high in fiber, minerals, and protein.

It is called a complete protein and is good for gut health. Tofu is also a good source of protein, and it has all the essential nine amino acids and magnesium, copper, zinc, and vitamin B1.

Overall this recipe provides you complete nutrition with great taste.

Ingredients:

  • 6 large bell peppers, cored with tops removed
  • ⅔ cup dry red quinoa
  • ⅓ cup chopped tomatoes
  • 2 large carrots, chopped
  • 2 cloves of garlic, minced
  • 1 red onion, diced
  • 1 cup extra-firm tofu, crumbled
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • ¼ teaspoon oregano
  • 2 cup vegetable broth
  • ½ teaspoon salt, plus more to taste
  • 1/2 cup baby spinach, thinly sliced

Directions:

  1. Prepare the vegetables by cutting and chopping them; remove the bell pepper cores and chop their tops.
  2. Preheat the oven to 350 F and add 1 ½ cups of water to an oven-safe baking dish; place bell peppers in the water. Bake them for 15 minutes; meanwhile, prepare the filling.
  3. Add quinoa and 1 ⅓ cup of water in a small saucepan and bring to boil; cook over medium heat until quinoa absorbs all water; cover and let it sit for 5 minutes before fluffing with a fork.
  4. Heat a pan over medium heat and spray with cooking oil; add onions and garlic; saute until fragrant. Add all spices and saute for 1-2 minutes. Add chopped carrots, crumbled tofu, and chopped tomatoes; add vegetable broth and cook over high heat for 1-2 minutes.
  5. Cook for 10 minutes over medium heat and then remove from heat; stir in baby spinach and cooked quinoa. Add salt and taste the mixture if more salt is needed.
  6. Fill this mixture in bell peppers and bake for another 10 minutes; remove from oven and serve immediately!
