This Quinoa Instant pot recipe is a classic vegetable and quinoa combination, giving you a quick & healthy meal option.
This recipe is so delicious that it gives you a taste like vegetable fried rice but much lighter than vegetable fried rice. The quinoa is gentle to your tummy and does not feel like bloating. If we talk about nutrition, it is full of healthy nutrients.
The magical benefits of quinoa like it are gluten-free, high in protein, high in fiber, rich in vitamins and antioxidants. It is a complete nutritious meal with healthy proteins, carbohydrates, and fats. The whole family will love it.
Ingredients:
● 1 1/4 cups white quinoa
● 1 1/4 cups filtered water
● 1 1/2 cups frozen peas, corn, beans, and carrots
● 3 eggs, highly beaten
- 1 1/2 tablespoon butter
- 2 1/2 tablespoons coconut aminos
- 1/2 pinch sea salt + pepper
- 1 handful fresh scallion, chopped
Directions:
- Turn on the instant pot to saute the quinoa; add quinoa and cook until it gives a popping sound, for about 5-7 minutes. Add water, seal the instant pot; cook on high pressure for 1 minute, and then turn off the heat. Allow the pressure to release and transfer the quinoa to a dish; set aside.
- Wipe off the pot and add butter to the bank; when butter is melted, add in the eggs and cook for 4 minutes while scrambling them with a wooden spoon. Push the eggs to one side of the pot, add vegetables to the other side; season with salt and pepper and cook until the vegetable becomes soft. Mix the eggs and vegetables and add to quinoa.
- Add coconut aminos and chopped scallions; mix to combine everything and serve.
