Quinoa Breakfast, a tasty and healthy start to your day!

It is quick and easy to make this Quinoa breakfast recipe, full of health benefits. When combined with milk, cinnamon, and vanilla, Quinoa gives you a great flavor and a delicious start to the day. Coconut milk is rich in electrolytes and can prevent fatigue. It improves digestion and helps relieve constipation.

Both quinoa and coconut milk are suitable for your tummy. You can make this Quinoa breakfast in batches to save time and then it will be even quicker to have a good meal in the morning.

The fresh fruits toppings, banana, and apple add a chunky flavor to each bite. If you top with peanut butter, it gives you an extra boost of protein, antioxidants, and vitamins.

But you are free to top this with any fruits of your liking, like eg. pear, persimmon, pineapple, or mango.

  • 1 cup quinoa, soaked in water for at least 1 hour
  • 3/4 (15 ounces) can coconut milk
  • 1 cup of water
  • 3/4 teaspoon ground cinnamon
  • 1 1/2 tablespoons pure maple syrup
  • 1 1/2 teaspoons vanilla extract
  • 1/4 teaspoon salt

Toppings (optional)

  • Banana
  • Apple
  • Peanut butter
  • Coconut/almond milk
  1. Drain the quinoa and add to the instant pot and coconut milk, water, cinnamon, maple syrup, vanilla extract, and salt. Set the instant pot to rice setting and seal the valve. Cook on low pressure for 11-12 minutes, release tension and cool completely.
  2. Divide the cooked quinoa into four bowls and top with your favorite toppings.
