Quinoa veggie buddha bowl is so easy to make that it will come together in only 25 minutes.

To cook quinoa, you only need to add water and quinoa in a saucepan; and then you have to cook it until it absorbs all moisture.

Meanwhile, you can prepare your veggies as you like. The drizzle of lemon juice and olive oil at the top makes this bowl simply flavorful.

You can toast the sesame seeds before topping them in the bowl; it will give you a nutty and crunchy flavor with fresh vegetables.

Quinoa is high in protein, and vegetables are high in antioxidants, vitamins, and minerals. You will never regret eating this healthy buddha bowl.


● ½ cup white quinoa
● 1 ¼ cup water
● A pinch of salt
● ½ avocado
● 2 cups arugula
● ½ cup carrots, julienne
● 1 large cucumber, sliced

● ½ cup purple cabbage, thinly sliced
● 5-6 cherry tomatoes, halved
● 2-3 red small radish, sliced
● 1 teaspoon black sesame seeds
● 1 tablespoon lemon juice
● 1 tablespoon extra-virgin olive oil
● Lemon wedges for serving


  1. Wash quinoa and add to a medium pot; add water and a pinch of salt; cook over medium heat until it starts boiling; cover and let it simmer over low-medium heat until it absorbs all moisture. Remove from heat and let it sit for 5 minutes, and then fluff with a fork.
  2. Peel the avocado and discard the pit; mash the avocado and season with salt and pepper.
  3. Divide the quinoa into two serving bowls; add sliced cucumber, julienne carrots, purple cabbage, cherry tomatoes, arugula, and sliced radish.
  4. Drizzle lemon juice and olive oil; top with mashed avocado, lemon wedges, and sprinkle sesame seeds.
