Ingredients:
● 1/2 cup (140g) mini shrimps, tail on
● 1/2 tablespoon olive oil
● 2 1/2 tablespoons butter
● Salt and pepper to taste
● 6 large eggs
● 1/2 cup mixed chopped herbs such as parsley, thyme, and cilantro
Instructions for Omelet with Shrimps:
- Heat a heavy bottom pan over medium heat; add ½ tablespoon of butter and ½ tablespoon of olive oil in the pan. When the butter starts to foam, add shrimps and season with salt and pepper.
- Cook 2 minutes on each side or until no longer pink. Remove from pan and set aside.
- Beat eggs in a bowl and season with salt and pepper; whisk well and make an omelet for two servings, each time pouring half of the egg mixture.
