This Paella with seafood recipe is a classic Spanish dish made from rice, seafood, and chicken.

● 1 tablespoon olive oil
● 2 chicken thighs boneless and skinless cut into 1-inch pieces
● 1 cup frozen vegetables, peas, and carrot
● 1/4 teaspoon salt or to taste
● 1/8 teaspoon pepper or to taste
● 1/2 large onion chopped
● 3 cloves garlic minced
● 3/4 cup arborio rice
● 7 oz diced fire-roasted tomatoes
● 2 cups vegetable or chicken broth low sodium

● 1/2 tablespoon hot sauce such as Tabasco or Sriracha
● 1 teaspoon smoked paprika
● 1/2 teaspoon saffron
● 1/2 lb large shrimp shelled and deveined but keep tails on
● 1/2 lb mussels scrubbed and soaked
● 1/2 lb clams scrubbed and soaked
● Fresh parsley for garnish, chopped
● 1/2 lemon cut into wedges


  1. Heat olive oil in a large skillet over medium heat; add chicken and cook until it changes color. Push the chicken to one side of the skillet, add onions to the other side of the skillet; cook until translucent. Add garlic and cook for 1 minute; then add vegetables and cook 1-2 minutes.
  2. Season with salt and pepper, and add rice and tomatoes. Cook until the base ingredients start to brown; then add chicken broth, saffron, smoked paprika, and hot sauce. Stir and season with more salt and pepper if desired. Cover and cook until the rice absorbs most of the liquid.
  3. Remove lid and arrange the shrimps, mussels, clams over rice; cover and cook until the clams open for about 10 minutes. You can remove the clams and mussel covers if you want, or you can serve as it is.
  4. Sprinkle chopped parsley and serve with lemon wedges.
