This delicious Recipe is a beautiful, wholesome and tasty light lunch or dinner.
When it comes to vegan meatballs, you can use a variety of grains and vegetables to make them, but here we are using chickpeas because the side serving is of mashed cauliflower, a veggie.
So veggie and grain combination would be great. The vegan meatballs are also served in marinara sauce; the chickpeas are combined with some spices, nutritional yeast, and flax seeds.
Flax seeds are added in place of eggs so that they help maintain the shape of meatballs.
The serving of mashed cauliflower with these vegan meatballs is so satisfying and filling that you will love to eat this dish again and again.
Overall this dish is healthy with all the necessary nutrients present in cauliflower and chickpeas.
Ingredients:
● 1 1/2 cup marinara sauce
For Meatballs:
● 1 1/2 tablespoons ground flax
● 1 1/2 cups chickpeas, canned
● 1/4 cup water
● 2 tablespoons nutritional yeast
● 1 teaspoon garlic powder
● 1 teaspoon onion powder
● 1/2 teaspoon Italian seasoning
● 1/4 cup breadcrumbs
● 1/4 teaspoon salt, or more to taste
Mashed Cauliflower:
- 1 1/3 heads cauliflower
- 1/4 cup plain almond milk
- 1/4 teaspoon sea salt or to taste
- 1 pinch black pepper
- 2 cloves garlic, minced
- 2 1/2 tablespoons vegan butter/olive oil
Directions Recipe for the Vegan Meatballs with Mashed Cauliflower:
- Preheat the oven at 425 F and line a baking tray with parchment paper.
- Mix ground flax seeds and water; set aside until you prepare chickpeas.
- Add chickpeas in a food processor and process with blade attachments until turned into tiny bits.
- Transfer to a large bowl and add the rest of the ingredients for vegan meatballs; mix well with a wooden spoon or use your hands to mix thoroughly.
- Take a heaping tablespoon of mixture for each meatball; shape them into balls, and place them in the baking tray.
- Bake for 30-35 minutes and turn halfway to ensure even cooking.
- Meanwhile, when meatballs are baking, prepare the mashed cauliflower. Cut the cauliflower into small pieces and steam in a steamer for 15-20 minutes. Remove from steamer and let it cool for a while.
- Heat vegan butter or olive oil over medium heat and add garlic until slightly browned; set aside.
- Add steamed cauliflower to the food processor; process and while processing, add sea salt, black pepper, garlic butter mixture, and almond milk. Adjust taste and consistency according to your liking,; you and process until cauliflower becomes smooth.
- Heat marinara sauce and add baked vegan meatballs; gently stir and serve with mashed cauliflower.
Top with fresh herbs if desired.
