Ingredients:

● 1 ¼ cups/300ml almond/soy milk
● 1 tablespoon lemon juice
● ⅔ cup/150g vegan butter
● 3 tablespoon corn syrup/maple syrup
● 1 teaspoon espresso powder/instant coffee powder
● 2 ¼ cups/275g plain flour
● ¾ cup/175g granulated sugar
● 4 tablespoons cocoa powder, unsweetened
● 3 teaspoons baking powder
● 1 teaspoon baking soda

Chocolate Frosting:

● ⅓ cup/75g vegan butter, room temperature
● 1 ⅔ cups/200g confectioner’s sugar
● 4 tablespoons cocoa powder, unsweetened
● 2 tablespoons water

Directions Recipe for this delicious Vegan Chocolate Cake:

  1. Preheat the oven to 350 F and lightly grease two 8-inch round baking pans with oil or butter.
  2. Add lemon juice to milk, stir and set aside to curdle slightly and turn into buttermilk.
  3. In a saucepan, add butter, syrup, and coffee/espresso powder; melt over medium heat and then allow to cool for some time.
  4. Sift plain flour, cocoa powder, baking powder, baking soda, and sugar; add buttermilk and melted butter mixture in a large bowl. Mix well until the mixture turns into a smooth batter.
  5. Divide the batter into greased pans and bake for 30-35 minutes or until a skewer comes out clean when inserted in the center of the cake.
  6. Remove from the oven and cool the cake over a wire rack. Meanwhile, prepare the frosting; add all frosting ingredients to a bowl and beat until soft and fluffy.
  7. When the cakes become cool ultimately, sandwich them with frosting and top with the remaining frosting.
  8. Chill in the refrigerator and serve to your family and friends.

Note: If you also want to cover the sides of the cake with chocolate frosting, then double the recipe for chocolate frosting.
