Sweet pumpkin is a popular oriental delight, and it is commonly called Petha in Asian cuisine.

It is sweet and crunchy in taste; it is made in this recipe with white pumpkin, sugar, lemon juice, rose water, and cardamom instead of only sugar.

Sweet pumpkin is a soft, chewy, and candy-like texture; most commonly, it is eaten dry or dipped in sugar syrup.

Cooking this dish at home can be a difficult task, but here is a simple and easy recipe so that you can enjoy this dessert at home.

Ingredients:

● 2 lbs white pumpkin, large & hard
● 2 teaspoons chemical lime
● 3 cups water
● 3 cups sugar
● 2 tablespoons milk
● 1 tablespoon lemon juice

● 1/4 teaspoon cardamom powder
● 1 teaspoon rose water
● Powdered sugar for dusting (optional)
● Walnuts for garnish (optional)

Directions:

  1. Prepare the pumpkin cubes; peel the pumpkin and remove the seeds and soft part; cut it into thick slices.
  2. Soak the pumpkin slices in enough water to cover the pumpkin slices; add 1 teaspoon of chemical lime and soak for few minutes. Then drain and cut into cubes.
  3. Add the remaining 1 teaspoon of chemical lime in enough water and soak the pumpkin cubes for 2 hours.
  4. After 2 hours, drain the pumpkin cubes and wash thoroughly to eradicate the chemical lime. Boil the pumpkin cubes in clean water until soft and tender; drain and set aside.
  5. Meanwhile, prepare the sugar syrup; add sugar and 3 cups of water in a saucepan and cook over medium heat until all sugar dissolve; add lemon juice and cardamom powder. Stir and cook until one thread consistency reaches; remove any foam and clean the sides during this process.
  6. Add cooked pumpkin cubes in sugar syrup and cook for a couple of minutes; remove heat and stir in rosewater; let it cool slightly before draining the pumpkin cubes.
  7. When cooled completely, transfer to a serving dish; dust with additional powdered sugar if desired and garnish with walnuts.
