Ingredients:
- 2 large bunches of kale
- 1 apple, thinly sliced
- 1/2 cup dried cranberries
- 1/4 cup pine nuts
- 1/4 cup pecans
Dressing
- 1/3 cup olive oil
- 1/4 cup red wine vinegar
- 1/4 cup freshly squeezed orange juice
- 2 tablespoons shallots, minced
- Kosher salt & freshly ground black pepper to taste
Directions:
- In a small bowl, whisk all dressing ingredients until well combined; set aside.
- Wash the kale and pat dry with a paper towel; roughly chop into bite-size pieces.
- In a large bowl, add chopped kale, dried cranberries, pecans, and pine nuts; drizzle over the dressing and toss to combine everything.
- Transfer to serving plate and top with sliced apples.
