This Roasted Cauliflower Recipe is one of the most healthy meal options for you to choose from. Cauliflower is a remarkable vegetable because it`s anti-inflammatory and antioxidant properties, reduce the risk of cancer. And it has other great health benefits. When you roast the Cauliflower, it gets a sweet, nutty, and crunchy flavor, which makes it absolutely delicious.
Combine the Cauliflower with Boiled Fish, Chicken, or Tofu, and you have a complete and delicious meal. Use any leftovers the next day in, for example, a tortilla or wrap because it is a fantastic filling. Top it with some chickpeas, avocado, or green lettuce, and there you have your leisurely lunch or dinner.
Make this Roasted Cauliflower Recipe a bit different by putting some Parmesan Cheese on top after 20 minutes in the oven and leave it for the last 5 minutes to melt. It is less healthy, of course, but it will give a super good taste to it (although not vegan anymore).

Ingredients:
- 1 medium head of cauliflower, cut into florets
- 2 tbsp olive oil
- 1 tsp fine sea salt
- 1/2 tsp freshly-cracked black pepper
- 1/4 tsp garlic powder
- Fresh herbs like Thymiane and/or Chives for topping (Optional)
Directions:
- Preheat the oven at 400 F/ 220 C. Prepare a baking tray with parchment paper and spray cooking oil.
- Combine the cauliflower and rest of the ingredients in a large bowl, toss to coat evenly.
- Transfer the cauliflower to baking tray and roast for 30-35 minutes or until golden and crisp. Top with fresh herbs and enjoy.
