● 1 lb. organic chicken breasts
● Salt & Pepper to taste
Marinade
● 2 tablespoons extra-virgin olive oil
● 2 tablespoons balsamic vinegar
● 1 lemon, juiced and zested
● 2 tablespoons fresh parsley, chopped
● 1/2 tablespoon fresh thyme. chopped
● 1 clove of garlic, minced
● 1/4 teaspoon smoked paprika
● A pinch of cayenne pepper
Salad
● 1 cup baby spinach
● 1 cup baby arugula
● 1/2 cup cherry tomatoes

- Wash and pat dry the chicken breasts with a kitchen towel. Place them in a bowl and add all marinade ingredients over the chicken.
