For Salad:

● 2 cups purple cabbage, sliced
● 4 cups broccoli florets
● 1 large yellow bell pepper, sliced
● 1 large carrot, sliced
● 2 cups cherry tomatoes, halved
● 1 large red bell pepper
● 2 cups cornsalad


● 1/2 cup olive oil
● 2 tablespoons apple cider vinegar
● 1 orange, juiced
● 1 teaspoon orange zest
● 1/2 of a shallot, minced
● Salt and pepper, to taste

Directions Recipe for the Rainbow Salad:

  1. Combine all dressing ingredients in a jar; cover and shake well until everything becomes well combined.
  2. Divide all the salad ingredients into four serving plates; arrange the vegetables in a rainbow style. Pour over the desired amount of dressing or divide the dressing over four salad plates equally.
