Ingredients:
● 1 cup brown/white dry quinoa
● 2 cups water
● 1 teaspoon salt
● 1 cup baby spinach
● 1 cup baby arugula
● 1/2 cup cherry tomatoes, cut into wedges
● 1/2 cup sliced carrots
● 1/4 cup sweet corns, canned or boiled
● 1 medium red onion, sliced
● 1 medium avocado, sliced
Dressing:
● 1/2 cup chopped parsley
● ¼ cup olive oil
● ¼ cup lemon juice
● 1 tablespoon red wine vinegar
● 2 cloves garlic, minced
● ½ teaspoon fine sea salt
● Freshly ground black pepper, to taste
Directions Recipe for Quinoa Salad Avocado Recipe:
- Wash quinoa thoroughly in a mesh and add to a medium saucepan with 2 cups of water and 1 teaspoon salt.
- Bring boil over medium heat and cook until quinoa absorbs all water; cover and turn off the heat. Then fluff with a fork after 5 minutes.
- Let the quinoa cool before adding all veggies. Then, mix all dressing ingredients and set them aside.
- Add the cooled quinoa to a large bowl; add all veggies and pour over the dressing. Toss to coat the salad and transfer to a serving dish.
