Kale & Edamame Salad is a wonderful dish. Salad is a natural source of fiber with nutritional benefits of fruits and vegetables. Kale salad comes out to be fresh green in color with green beans and red cranberries.
It is a mouthwatering and simple recipe, and it will give you a very light feeling. Kale is rich in Vitamin A, C, and K, that collectively good for eyes, bones, immune system, chronic disease prevention, and blood clotting.
The edamame provides healthy fiber, antioxidants, and vitamin K.
Ingredients:
●1 bunch organic kale, torn into bite-size pieces
● 2 cups arugula
● 1/2 cup edamame
● 1/2 cup grape tomatoes, halved
● 1/2 cup dried cranberries
Dressing:
● 1/4 cup organic olive oil
● 2 teaspoons lemon juice
● Salt & pepper to taste
Directions:
- In a small bowl, add dressing ingredients; season with salt and pepper; whisk until well combined.
- Add kale, arugula, grape tomatoes, edamame beans, and dried cranberries in another large bowl. Pour over the dressing and toss to combine everything.
- Transfer to a serving dish and refrigerate for 15 minutes before serving.
