If you are a Japanese pancake lover and cannot go to Japan whenever you wish to eat those fluffy, sweeties, and delicious pancakes, then this recipe is for you.

The Japanese pancakes are made using egg whites and beating them with sugar to make a cloud-like texture.

Then it is combined with yolk batter to create a mixture that gives you so delicious pancakes. When you eat, it feels like you are eating a sweet cloud with fruits and sugar.

It readily melts in your mouth, giving you a long-lasting flavor. Healthy and nutritious, this recipe is not like the other greasy pancakes and makes you feel heavy.

Ingredients:

● 4 egg yolks
● 1/4 cup sugar
● 1/2 cup milk
● 3/4 cup flour
● 1 teaspoon baking powder
● Powdered sugar and Berries for topping (optional)

Whites
● 8 large egg whites
● 1/2 teaspoon cream of tartar
● 6 tablespoons sugar

Instructions:

  1. Beat the egg yolks and sugar until frothy and pale; slowly add milk in batches and beat well. Sift in the flour and baking powder and mix well, making sure everything is well combined.
  2. Beat the egg whites and cream of tartar until frothy. Slowly add in the sugar while beating until white meringue formed with holding peaks.
  3. Fold the ⅓ of the egg whites into the egg yolk mixture, making sure no lumps remain in the batter.
  4. Heat a non-stick pan with a lid and lightly spray with cooking oil. Pour the batter using an ice-cream scoop or a similar big spoon. Cover and cook on medium heat for about 4-5 minutes; remove the lid and carefully flip the pancakes and cook for another 4-5 minutes or until golden brown on both sides. Repeat until all batter is used.
  5. Transfer the pancaked to serving plate and dust with powdered sugar; top with some berries and serve. Enjoy!
