These ice popsicles are a combination of watermelon, coconut cream, and kiwi. They look beautiful with irresistible natural flavors.
To give the popsicles a watermelon seeds presence, chocolate chips are added; the chocolate chips look like watermelon seeds.
Watermelon is high in water content, and it keeps you fresh and hydrated. It reduces inflammation and oxidative stress, prevents muscular degeneration, aids skin health, and relieves muscle soreness.
Although kiwi is used in a small amount in this recipe, it is rich in vitamin C and supports heart health, digestive health, and immunity.

Ingredients:
● 3 cups (510g) seedless watermelon, diced
● 4 tablespoons chocolate chips, optional
● ½ cup (115g) coconut cream, regular or light
● 1 cup (142g) Kiwi, diced
● 8 popsicle sticks
Directions for Healthy Watermelon Ice Popsicles:
- Add seedless diced watermelon to a blender and blend until pureed.
- Similarly, puree the diced kiwi; you can use a fork to finely mash the kiwi instead of a blender.
- Add coconut cream to a bowl and whisk it with the help of a whisk for 1-2 minutes to make it light and fluffy.
- Fill the popsicle molds ¾ with watermelon puree, stir in chocolate chips, and freeze for 30 minutes.
- Then add a layer of coconut cream, leaving space for kiwi puree; freeze for 30 minutes.
- Then add the last kiwi layer and insert popsicle sticks; freeze for at least 4-5 hours or overnight for best results.
- To remove the popsicles from popsicle molds, run the molds under warm water for 2-3 minutes and gently remove them.
- Serve immediately!
