● 1 lb. organic chicken breasts
● Salt & pepper to taste

Salad:

● 1 cup baby spinach
● 1 cup baby arugula
● 1/2 cup cherry tomatoes

Marinade:

● 2 tablespoons extra-virgin olive oil
● 2 tablespoons balsamic vinegar
● 1 lemon, juiced, and zested
● 2 tablespoons fresh parsley, chopped
● 1/2 tablespoon fresh thyme. chopped
● 1 clove garlic, minced
● 1/4 teaspoon smoked paprika
● A pinch of cayenne pepper

Directions Recipe for the Grilled Chicken Breast with Salad:

  1. Wash and pat dry the chicken breasts with a kitchen towel. Place them in a bowl and add all marinade ingredients over the chicken.
  2. Rub all ingredients over the chicken breasts, cover, and refrigerate for 1 ½ hour. After that, the marinade will start to break down the chicken.
  3. Preheat the grill to medium; carefully remove the marinated chicken breasts from the marinade and lightly sprinkle with salt and pepper.
  4. Place on the grill and cook for 4-5 minutes on each side or until cooked thoroughly.
  5. Remove chicken breasts from the grill and let them cool for 5 minutes before slicing.
  6. Serve them with salad and dig in!
