Fresh Chicken Salad with Blueberry and Feta.

Chicken Blueberry Feta Salad

Make this beautiful Chicken Salad your all-time favorite, and it will bring the sun into your kitchen, rain or not! This salad with Chicken Breast, Feta Cheese, and Blueberries is healthy, easy to take-away for a summer picnic, and a gorgeous postcard to look at.

  • 1/4 cup Extra Virgin Olive Oil (divided)
  • 1 tbsp Apple Cider Vinegar
  • 1 tbsp Maple Syrup
  • 1 tsp Sesame Seeds
  • Sea Salt & Pepper to taste
  • 450 grams Chicken Breast
  • 1 Carrot (peeled, cut into thin sticks)

  • 6 cups Arugula
  • 2 cups Blueberries
  • 1 cup Feta Cheese (crumbled)
  • 1/2 cup Red Onion (thinly sliced)
  • 1 tbsp Slivered Almonds
  • 1/2 tsp Red Pepper Flakes (optional)

  1. Preheat the oven to 350ºF (175ºC) and line a baking sheet with parchment paper.
  2. Add 3/4 of the olive oil, maple syrup, apple cider vinegar, sesame seeds, salt, and pepper to a small mason jar. Shake and set aside.
  3. Brush both sides of the chicken breasts with the remaining olive oil and season with salt and pepper. Arrange the chicken breasts on the baking sheet and place it in the oven—Bake for 30 minutes or until tender.
  4. While the chicken is in the oven, prepare the salad. Add the arugula, blueberries, feta, carrot sticks, and red onion to a large bowl and toss well. Set aside.
  5. When done, remove the chicken breasts from the oven and cut into slices.
  6. Divide the salad between plates, top with chicken, drizzle with salad dressing, and slivered almonds. If you like it spicy, sprinkle with red pepper flakes and enjoy your Chicken Salad.
