This Creamy Cauliflower Soup Recipe is a great low carb alternative to beans and legume soups. It is high in fiber, antioxidants, and vitamins, so add it to your diet. It keeps you fuller for a longer time and it can help in weight loss.
Soup is a wonderful way of having an easy lunch or dinner. It is packed with great nutrients and you can vary with a lot of vegetables. This recipe is a basic Cauliflower Soup, but never the less very delicious and tasty. You have it on your table in about 30 minutes!
To make this soup even healthier, you can add more ingredients like Chick Peas or some White Mushrooms. To make the soup fuller you could add 2 or 3 Potatoes, so you won`t get hungry before your next meal.

Do you want to try something really special? Why not try to take a purple Cauliflower instead of a white one. Your eyes will pop when you see this special variety of Cauliflower and it tastes even better than a white one because it is a bit nuttier and sweeter.
The color is not engineered, the purple actually comes from water-soluble pigments that are found in many other plants and plant-based products, like red cabbage and red grapes.
Ingredients:
- 2 yellow onion, roughly chopped
- 5-6 cloves garlic, smashed
- 1 large head of cauliflower, roughly chopped
- 5-6 cups vegetable broth
- 2 tbs olive oil
- Salt and pepper to taste
- Cilantro for topping
Directions:
- Heat olive oil in a pot over medium heat. Add the garlic and onions to oil and cook for 10 minutes while stirring continuously. Then add the cauliflower and cook it for another 5 minutes.
- Add broth and bring it to boil, slow down the heat and let it simmer until the cauliflower is tender.
- Blend the soup using an immersion blender until super smooth and creamy. Season with salt and pepper. Serve hot. Enjoy your Cauliflower Soup Recipe!
