Cauliflower Rice

This Cauliflower Rice Recipe is a one-pot Easy to prepare and incredibly simple dish that contains a lot of vitamins and antioxidants.

Cauliflower has become very popular in the last couple of years, causing a production increase of over 60% in the US over the years 2012 to 2016. And there is a good reason for that because Cauliflower has many benefits. It has low calories, high fiber, and it is a gluten-free alternative to rice and flour. It contains a lot of Vitamine C (about 58% of the daily value) and some moderate Vitamine B and K.

Cauliflower heads are very versatile to use in the kitchen. You can roast, grill, boil, steam, fry, or pickle them and you can even eat them raw.

This Cauliflower Rice Recipe is easy to make and can be used as a side dish to example Tofu (if you are a vegetarian or vegan person). It goes well with meat and fish because it tastes the same as ordinary rice would do. It is a really good substitute and a good dish to give to kids to let them eat more vegetables.


  • 1 medium cauliflower
  • 3 clove garlic, minced
  • 3-4 tbs soy sauce, low sodium
  • 1 1/2 tbs coconut oil
  • 1/8 tsp salt
  • 1/8 tsp black pepper, ground
  • Chopped parsley for topping (optional)


  1. Wash and cut the cauliflower into small pieces, discard the tough core. Transfer the cauliflower to the food processor and pulse until it resembles rice like crumbs. Process in batches depending upon the size of the food processor.
  2. Heat coconut oil in a medium pot over medium heat. Saute garlic in oil for 2-3 minutes and add cauliflower rice. Cook for 5-6 minutes. Stir in the soy sauce and season with salt and pepper. Cook until cauliflower rice becomes tender. Top with freshly chopped parsley.
