  • 8 cups broccoli florets
  • 2 tablespoons butter
  • 1 clove garlic, minced
  • 1 small onion, chopped
  • 2 stalks celery chopped
  • 3 cups chicken broth
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 1/2 cup milk
  • 1/2 cup heavy cream
  • A pinch nutmeg
  • 1/4 cup grated Parmesan cheese


  1. Heat 2 tablespoons of butter in a pot over medium heat and saute onions, garlic, and celery until soft; add in the broccoli and cook for 1-2 minutes. Add chicken broth and cover; cook until broccoli becomes soft.
  2. Once the broccoli becomes soft, mash it using a potato masher or blend in a high-speed blender if you like a smooth consistency.
  3. In another saucepan, heat 3 tablespoons of butter and add flour; cook until well combined and fragrant. Stir in the milk and heavy cream; whisk and continue to cook until it reaches a creamy consistency.
  4. Reserve some cream for the topping and add rest in the soup pot with a pinch of nutmeg. Stir to combine everything and pour into bowls.
  5. Top with reserved cream, Parmesan, and some basil leaves if desired. Serve with toasted bread slices.
